Six at 6pm with… Michael Norman-Watt, Co-founder of Brambles
Michael Notman-Watt, co-founder of Brambles, has worked in an array of impressive kitchens: The Dairy in Clapham, 64 Degrees in Brighton, and Bistro Union, owned by Michelin-starred chef Adam Byatt. All this before launching private supper club business The Syndicate Takeover Kitchen in 2018 and Brambles, an exciting collaboration between Michael, Emily & David Pearse, and Harry Hiscock. Together they bring local, seasonal food to pubs and venues in and around Brighton. Michael’s currently at the New Inn, Hurstpierpoint, which just happens to be my local 🙌🏻.

1. Sussex food that makes you go 😋
2. Favourite place to go for coffee?
V&H Cafe in Hove. Great filter coffee as well as normal espresso. While you are there you may as well get a great breakfast too.
3. Favourite Sussex pub for a roast?
Not a pub but Wild Flor in Hove does a killer roast! But have mention, our roast at The New Inn is pretty bloody good.
4. Favourite Sussex tipple?
Arundel Brewery’s Tarrent Street. Absolutely delicious and low abv, so no big hangover the next day.
5. Favourite Sussex dish or ingredient?
We have so much incredible produce! Meat, fish and vegetables all at our doorstep. I think for me, partridges are my favourite meat and in abundance right now!
6. Bannoffee Pie or Sussex Pond Pudding?
I’m a sucker for caramel so has to be Bannoffee Pie!

You’ll find Michael in the New Inn’s kitchen. The kitchen is open 12pm – 5pm on Sundays, 12pm – 3pm and 6pm – 8.30pm Tuesday – Friday. Closed all day Monday. Booking is a must to avoid disappointment.
